A Casual Dinner Party on Friday

It is FINALLY FRIDAY! We can’t wait for the weekend to start and figure that the best way to start the weekend as soon as possible is to have a dinner party on Friday evening.

Although it is fun to go to a dinner party on Friday, it is challenging for the hosts obviously. After a work week, we feel tired and don’t have time to do grocery shopping and cook a 3-course meal. But dinner parties are not only about food, but also about spending time with friends and family. A low-key dinner is perfect to unwind and relax.

We decide to cook whatever is in our fridge for the meal. Lucky for us, we find pizza dough, a jar of artichokes, homemade basil pesto, two red peppers,brussel sprouts, a couple of slices of prosciutto and frozen wild boar ragu.

We cut the pizza dough by half and roll the dough out very thin. There will be two pizzas! For one, we spread artichokes, stripes of red pepper, a few black olives, and pesto; for the other one, we lay down the red pepper stripes and prosciutto,

Brussel sprouts are cut into thin strips and sauteed in garlic and olive for a quick brussel sprout hash.

The wild boar ragu was cooked in a big batch in the mid fall and two-serving packs are frozen for weekday quick dinners. We use troffiette pasta, a short hollow pasta, for the ragu. It is perfect for the sauce to go inside each little tube.
